VIGNIFICATION
Soft pressing, classic white vinification with cleaning of the musts by decanting, first racking and fermentation at a controlled temperature (18-20 ° C).
Method of harvest: mechanical at reduced speed
State of the grapes: excellent degree of ripeness being careful not to overripe so as to maintain aromas and acidity
Harvest time: second week of September
Grapes: this Ribolla Gialla derives from a single clonal variety called Ribolla Gialla Standard.
Defense methods: integrated pest control with low environmental impact

TECHNICAL NOTES
Color: straw yellow
Nose: intense, fresh and refined. The notes of spring white flowers blend perfectly with the scents of fresh white pulp fruit and citrus.
Taste: wine with good acidity that makes it fresh and pleasant. The citrus notes slowly give way to a nice minerality. Excellent persistence on the palate which denotes a wine with good structure.

PAIRING
Great aperitif wine. Excellent accompaniment to most fish-based dishes.
