After destemming the must with the skins is transferred into a stainless steel tank for starting the fermentation at a controlled temperature. After approximately 12-15 days skin contact, at the end of the alcoholic fermentation, the wine is ready to be aged for a long term (12-14 months) in stainless steel before the bottling.
Harvest: hand picking in small boxes
Grapes conditions: perfectly mature at the picking time
Picking Time: first week of September.
Grapes: this 100% Pinot Nero is a blend of different clones of Pinot Nero. Clones: LB18, M1. The blend of different clones allows to get a more complex wine.

Colour: Light red with purple reflections
Nose: intense, delicate and floral, red berries and dark chocolate, fragrant and persistent.
Taste: medium to light bodied, elegant, soft tannins. Very long finish. Liquorice and tobacco with notes of dark chocolate.

Ideal with roasted white meats and lamb, the Pinot Nero is the only one red that can be paired with fish (Octopus, grilled sea-bass).
