Cabernet DOC Friuli Aquileia

After destemming the must with the skins is transferred into a stainless steel tank for starting the fermentation at a controlled temperature. After approximately 12-15 days skin contact, at the end of the alcoholic fermentation, the wine is ready to be aged for a long term (12-14 months) in stainless steel before the bottling.
Harvest: hand picking in small boxes
Grapes conditions: perfectly mature at the picking time
Picking Time: third week of September.
Grapes: this 100% Cabernet is a blend of different clones of Cabernet Sauvignon and Cabernet Franc. The experience and the knowledge allow us to find the perfect balance of the two varieties each year to get the most enjoyable wine.

Colour: Ruby Red with violaceous reflections.
Nose: small red fruits, berries, leather.
Taste: very intense, herbaceous, tobacco hints with small red fruits and spicies.

In general pairs very well with all the cold cuts. Great with Gulash and stews. Grilled filet. Old seasoned cheeses.
